Beat the eggs and egg yolks and stir in the honey. Heat the honey in a double boiler until it solidifies. Bring the milk and cream to a simmer with a generous pinch of salt and slowly stir into the egg mixture. Heat in a double boiler until the mixture begins to thicken, then set to a rose. Slowly pour into a bowl with the tahini and stir vigorously. If the tahini doesn’t dissolve evenly, puree with a hand blender. Cool in an ice cream maker and then freeze to set. Refrigerate for at least half an hour before serving.
