Ingredients for 1 servings:
- 300 g honey
- 150 g cane sugar
- 100 g walnuts, coarsely chopped
- 100 g almond(s), coarsely chopped
- 1 tbsp cinnamon
- 1 tsp gingerbread spice
- 1 pinch of ginger powder
- 20 cl cherry brandy
- 400 g flour
- 1 tsp baking powder
- 1 pinch of salt
- 50 g candied lemon peel, as needed
- 50 g candied orange peel, as needed
- 100 g icing sugar, for the glaze
- 1 tbsp lemon juice, for the glaze
- 1 tbsp cherry brandy, for the glaze

Bring the honey and sugar together in a small pan to a boil. Add the flour and baking powder to a bowl. Add the nuts, spices, salt, and cherry brandy. If desired, add some diced citronella. Knead lightly and roll out while still warm. Sprinkle a generous amount of flour on a baking sheet, turning the sticky dough several times and dusting with flour every now and then. Roll out the dough to a thickness of 1/2 cm and cut into small 4 x 4 cm squares. Makes about 75 pieces. Spread these on 2 to 3 baking sheets lined with baking paper and let dry for at least 1-2 hours. Can also be done overnight. Preheat oven to 165°C fan (conventional oven: higher if desired) and place the sheets in the oven one after the other for approx. 12-15 minutes. While still hot, immediately cover with glaze and let cool on a wire rack. Variation: Place the dough whole on the baking sheet, let it dry, and bake. Immediately spread the glaze over the hot dough and then cut into squares. Treats should be stored in tightly sealed tins. They’ll keep for a long time. If you prefer them softer, let them air dry for a few hours.
