Ingredients for 4 servings:
- 20 slice(s) smoked goose breast
- Leek
- some parsley (root) and celery root
- Carrot(s)
- 2 tbsp vinegar (raspberry vinegar)
- 1 tbsp sherry
- 1 tbsp orange juice
- salt and pepper
- olive oil
Instructions
Working time approx. 20 minutes; Rest time approx. 15 hours; Total time approx. 15 hours 20 minutes
Peel and finely dice the vegetables. Use 30 to 40 g of each variety. Trim and finely chop the leeks. Mix the remaining ingredients into a light vinaigrette. When serving, place 5 slices of goose breast on each plate. About 10 minutes before serving, add the vinaigrette. This also works with smoked duck breast.
