Ingredients for 1 servings:

  • 250 g flour (wheat flour)
  • 2 tsp baking powder
  • 200 g sugar
  • ½ tsp clove(s), ground
  • 2 tsp gingerbread spice
  • 1 tsp ground cinnamon
  • 1 lemon(s), peel, grated
  • 3 tbsp honey, liquid
  • 2 eggs
  • 100 g hazelnuts, finely chopped

For the dough, combine the flour and baking powder, sift them into a mixing bowl, add the sugar, spices, lemon zest, honey, eggs, and hazelnuts, and mix well with a dough hook. Then, on a floured surface, knead into a smooth dough. If it’s sticky, wrap it in foil and chill for a few hours. Form the dough into finger-sized rolls (about 4 cm long and 1.5 cm wide) and place them well apart on a baking tray lined with baking paper. Place in the middle rack of an oven preheated to approximately 180 degrees Celsius (160 degrees Celsius fan-assisted oven, gas mark 3) and bake for approximately 12-15 minutes.
