Ingredients for 6 servings:

  • 1 egg(s)
  • 125 g butter
  • 1 tbsp horseradish, freshly grated
  • Salt
  • Cayenne pepper
  • 1 tbsp chives
  • 1 tbsp parsley

Instructions

with grilled, pan-fried, fish dishes or as a spread with smoked fish

Hard-boil the egg, cool in cold water, peel, and remove the yolk. Whisk together the egg yolk, softened butter, and horseradish. Chop the egg white into small pieces and fold into the butter. Season with salt and cayenne pepper. Finely chop the chives and parsley and mix in. If desired, transfer the finished butter to small molds (e.g., ice cube trays) or simply store it in the covered bowl in the refrigerator. The aroma of the butter will intensify the longer it sits.
