Ingredients for 6 servings:

  • 1 kg pork with rind (belly, shank, shoulder…)
  • 2 carrots
  • ½ celery
  • 1 onion(s)
  • 3 cloves garlic
  • 1 bay leaf
  • 5 peppercorns
  • ½ stalk(s) leek
  • 2 tsp salt and pepper, stock cubes
  • 1 kg potatoes
  • Caraway seeds

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Slowly simmer the pork with water, spices, and vegetables until it becomes a soup. Depending on the meat, this will take about 1-1.5 hours. At the same time, peel the potatoes and cook them in salted water with caraway seeds until soft, then grate the horseradish towards the end. When the meat is cooked, slice them, arrange them on plates, pour the soup over them, and sprinkle with the freshly grated horseradish. Serve with the boiled potatoes. This is an Austrian recipe, very simple but delicious. If you like it juicy, use a knuckle or a belly; if you prefer it lean, just use a shoulder! All with the rind, please!
