Cold-stirred cherry jam

Ingredients for 1 servings:

  • 1,000 g cherry(s), pitted, ripe, dark
  • Locust bean gum (Biobin), 16 scoops
  • 6 tbsp honey

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Puree the cherries in a blender or food processor. Add the Biobin and honey and let it set. If it doesn’t set properly, add a little more Biobin. The jam will keep in the refrigerator for about 1 week.
