Ingredients for 1 servings:

  • 20 g butter
  • 2 tbsp flour
  • ¼ liter of milk
  • ¼ liter meat broth (approximately)
  • 40 g horseradish, grated
  • lemon juice
  • Sugar
  • Salt

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

e.g. with Tafelspitz

Melt the butter and make a light roux with the flour. Deglaze with the milk, stirring with a whisk. Slowly add the beef broth until the sauce reaches the desired consistency. Simmer over low heat for about 10 minutes, stirring frequently. Add the grated horseradish (amount depending on desired spiciness), bring to a boil briefly, season with a little lemon juice, salt, and sugar, and serve hot with the boiled beef.
