Hot and Sweet Pork Hax

Ingredients for 4 servings:

  • 2 pork knuckles, not cured
  • 2 cloves garlic
  • 2 large onions
  • 2 tsp, leveled chili flakes
  • 2 bottles of malt beer, not Vitamalz, that’s too sweet
  • some clarified butter

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

in a pressure cooker, a culinary delight

Finely chop the onions and garlic and sauté briefly in a pressure cooker with clarified butter. Add a bottle of malt beer and the chili flakes, place the shanks on top, and top up with the second bottle of malt beer. Close the pressure cooker. Cooking time is approximately 45-60 minutes, depending on the size of the shanks. I always play it safe with large shanks and allow an hour. We like to serve it with mashed potatoes and peas and carrots.
