HOT Sweet Potatoes with Ginger and Leek

The perfect hot sweet potatoes with ginger and leek recipe with a picture and simple step-by-step instructions.

Sweet potatoes “HOT”

  • 3 Sweet potatoes
  • 1 Red onion, diced
  • 1 Solo garlic, diced
  • 2 tbsp Peanut oil
  • 1 tsp Chili powder
  • 8 Bacon slices

Ginger leek

  • 3 Stems Leek
  • 1 piece Ginger, the size of a walnut
  • 1 Diced onion
  • 75 ml Vegetable broth
  • Salt
  • White milled pepper
  • 2 tbsp Oil

Sweet potatoes

  1. Peel the potatoes and cut into cubes. Heat the oil in a pan and fry the sweet potatoes for 5 minutes. Add the chilli powder, onion cubes and garlic cubes and fry for another 5-10 minutes while turning. In between add the bacon slices. To do this, slide the potatoes onto one side of the pan and fry the bacon on the exposed side of the pan. Mix with the potatoes.

Ginger leek

  1. Clean and wash the leek and cut into coarse rings. Peel and grate the ginger. Heat the oil in a pan, sauté the onion, ginger and leek rings. Deglaze with the vegetable stock and simmer for 8-10 minutes.
