How Can You Make Your Own Breadcrumbs?

We show you different ways how to make finely ground breadcrumbs or coarser breadcrumbs. To make breadcrumbs yourself, the following types of bread are best:

  • white bread
  • Toast bread
  • Pretzel rolls
  • Flatbread
  • Rusks
  • brown bread
  • baguettes

For your breadcrumbs, let the bread dry for a few days. If possible, cut it into cubes beforehand, as long as it is not too hard for it. If you want to make the light panko breadcrumbs from Japanese cuisine, use white bread and also cut off the rind before drying. To speed up drying, you can also place the bread cubes in the oven at 50 degrees for two hours. It is important that the bread is really well dried, otherwise, the breadcrumbs will quickly become mouldy.

You have the choice for further processing:

  • You can make breadcrumbs yourself with the food processor – this requires the least amount of time and effort. Gradually feed the dried bread into the machine until everything is ground up.
  • Alternatively, make fine breadcrumbs or coarser breadcrumbs by hand. Use a kitchen grater that is not too coarse or place the dry bread cubes in a freezer bag and roll over them several times with a rolling pin. Some simply turn stale bread through a meat grinder or drum grater.

Experiment with what suits you best. Then store the breadcrumbs in an airtight and dry place. This will keep them for about two months.

Make breadcrumbs yourself without bread

If you want to make breadcrumbs from gluten-free breadcrumbs or breadcrumbs, just use gluten-free bread. You can read about the difference between breading and breading in our expert knowledge. You can also use breading without bread. Almond flour is often used for breading in low-carb cuisine (although the light marzipan aroma that develops does not go well with every dish). Soy flakes are also suitable for rolling. If you find schnitzel based on sunflower or pea protein in the shops, you can also process these into gluten-free and vegan breadcrumbs.

Make your own breadcrumbs – great use of leftovers for old bread

Making breadcrumbs and breadcrumbs yourself is not only super simple, but you are also making a small but valuable contribution to the topic of sustainability. Because instead of resorting to industrially produced breadcrumbs, you have a positive effect on the climate balance of the end product. For your breadcrumbs, neither a machine in a factory nor a truck has to be used to transport the food to the supermarket. So get out your grater and save your dry, old leftover bread from the trash can.

Recipe tips: You can then use your homemade breadcrumbs to prepare delicious dishes such as our kohlrabi schnitzel or crispy chicken nuggets.
