Vanilla Cream with Strawberry Cream and Crispy Breadcrumbs

We need: in general …
- 250 ml Cream
- 1 packet Waffle chocolate rolls
… for the Qumiq vanilla mixture
- 250 ml Quimiq vanilla
- 200 ml Greek yogurt
- 3 tablespoon Vanilla sugar
… for the strawberry cream
- Forest strawberries
- 25 ml White wine late harvest
- 1 teaspoon Lemon juice
- 1 tablespoon Lemon sugar
preparation
- First put the quimiq pack in hot water (this makes QUIMIC easy to work with) – whip the cream – cut the wafer rolls into crispy crumbs
Quimiq vanilla paste
- Put the room temperature quimiq in a tall mixing beaker – add Greek yoghurt – season with vanilla sugar – add 2/3 of the whipped cream to the quimiq mixture and mix everything well
Strawberry cream
- Finely puree the wild strawberries with the white wine, lemon juice and lemon sugar – add the remaining third of the whipped cream to the pureed strawberry mixture and mix well – chill the strawberry cream until serving
Dessert – structure
- Pour crispy crumbs into the glass at the very bottom – then the vanilla cream over it – on top again some crumbs all around – cover with cling film and refrigerate for a while – remove the cling film before serving and put the strawberry cream on top in the middle
Tip for next time …
- add the crispy crumbs on the upper edge before serving (i.e. after the cooling time!) Then they will stay even more crispy …
