Ingredients for 1 servings:

  • 600 ml Prosecco or sparkling wine
  • 100 ml mineral water
  • 100 ml lime juice
  • 80 ml syrup, elderflower
  • 1 kg gelling sugar, for jelly
  • 3 sprigs of mint
  • ½ lime(s), unsprayed

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 34 minutes

Combine sparkling wine, mineral water, lime juice, and elderflower syrup in a saucepan. Stir in the gelling sugar. Add the mint sprigs. Peel the lime zest with a vegetable peeler and add it as well. Bring to a boil while stirring. Boil gently over high heat for 4 minutes. Remove the mint and lime zest. Pour the jelly into jars while it’s still hot and seal quickly. If you like, you can stir in finely chopped mint before filling the jars.
