Ingredients
 

For painting:

  • 250 ml Milk
  • 20 g Yeast fresh
  • 1 Egg
  • 0,5 Organic lemon, zest
  • 0,5 tsp Salt
  • 50 g Butter
  • 0,5 tsp Sunflower oil
  • 50 g Liquid butter
  • 125 g Sugar
  • Possibly some cinnamon

Instructions
 

  • Put the flour in a larger bowl and make a well in the middle. Crumble in the yeast and mix with 1/4 of the slightly warmed milk and 1 teaspoon sugar until it has dissolved. Cover the bowl and let the yeast rise in a warm place for approx. 20 minutes until it "bubbles".
  • Then add the egg, remaining milk, lemon zest, salt and butter to the yeast-flour mixture and knead into a smooth dough. Then add the oil and knead again vigorously. Cover the bowl well again and let it rest in a warm place until the dough has doubled in volume. Can take up to 1 hour.
  • Preheat the oven to 240 ° circulating air. Place the dough on a floured surface, quarter it and roll out each part into a rectangle of approx. 35 x 40 cm. Cut into 2 cm wide strips. Wrap this - without any gaps - around a greased tube (diameter if possible 5 cm) and bake it upright on a tray in the oven with circulating air for about 10 minutes until golden brown. Push the tray onto the bottom of the oven. Rotate the tube around itself while baking. After 10 minutes, brush the Strizel with the liquid butter, sprinkle with the sugar or cinnamon sugar and bake for another 5 minutes.
  • Take out of the oven, strip off the tube and leave to cool on a wire rack - but only a little. ..... because they taste best when slightly warm and get you in the mood for your next visit to the Christmas market. In addition a delicious mulled wine ....... the advent can come.

Tip:

  • 1.) Actually, the Strizel are baked horizontally - wound on a thick wooden roll - rotating on a grill. ... so at Christmas markets ......... But you can also make them at home without any problems. If you don't have any rolls with a large diameter at hand, then you can also use the smaller ones for "foam rolls" with a diameter of 2 cm; The Strizel then just get smaller and the amount increases. For me there were 5 big ones.
  • 2.) If you want to double the amount of dough, you have to use 2 egg yolks and 1 egg white instead of 1 egg. Otherwise all other ingredients are doubled as normal.
