Ice Cream: Coconut Ice Cream

- 400 ml Coconut milk
- 2 Egg yolk
- 1 Egg
- 200 ml Cream
- 3 El Sugar
- 3 El Desiccated coconut
- 3 El Coconut syrup
- Put about 1/3 of the coconut milk in a saucepan and bring to the boil. Put the yolks and the whole egg in a beating kettle, whip the sugar well, then pour in the hot coconut milk and beat over steam until it becomes thick.
- Beat in ice water, then add the rest of the coconut milk and season with syrup. Whip the cream until it is semi-stiff and add to the mixture, and if necessary add more syrup depending on your taste, now in the ice cream maker and you’re done.
