Icelandic cream cheese and blueberry dessert

Ingredients for 2 servings:

  • 225 g Skyr (Icelandic cream cheese)
  • 1 cup blueberries, 0.2 l frozen or fresh and destemmed
  • 100 ml water
  • 2 tbsp sugar (alternatively some sweetener)

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Mix the water with the sugar (sweetener will be added later, if desired) until the sugar has dissolved. Add the blueberries and heat briefly. The berries should still be firm to the bite. (The sweetener would be added after heating, if desired.) First, beat the cream cheese until slightly creamy, then gradually stir in the blueberry mixture. Season to taste and pour into glasses. A light dessert that could be made even lighter with sweetener, if desired.
