Lettuce hearts with cucumber and tomato in kefir herb dressing

Ingredients for 2 servings:

  • 1 lettuce heart(s)
  • ¼ cucumber(s)
  • 10 tomatoes (mini tomatoes)
  • 2 tbsp mixed herbs, e.g. parsley, chives
  • 50 ml kefir
  • 1 tbsp vinegar
  • 2 tbsp mixed herbs, finely chopped
  • some herbal salt
  • pepper
  • possibly sugar

Instructions

Working time approx. 12 minutes; Total time approx. 12 minutes

Chop and wash the lettuce hearts. Peel or wash and chop the cucumber. Wash and halve the tomatoes. Wash and chop the herbs. Mix the dressing together and season to taste. Mix the lettuce hearts, cucumber, and tomatoes with the dressing and arrange on plates or in bowls. Sprinkle with fresh, chopped herbs for garnish.
