the Icelandic version of crêpes

You’ll also need a pönnukökur pan for this. It has fine circular grooves, like a record. Mix the eggs, milk, and vanilla drops with a mixer. You can also use a sachet of vanilla sugar instead of the vanilla drops. In a small pot, mix the flour, salt, and baking powder. Melt the butter in the pan over low heat. Then add it to the batter, stirring constantly. The pan shouldn’t be very hot (electric stove level 3), otherwise the batter will stick and turn black. Using a ladle, pour some batter onto the pan and spread it evenly by swirling the pan. As soon as the surface has set, turn it over. After three minutes, the other side should also be light brown.
