- 1 red bell pepper(s) – baked or raw
- 1 bell pepper(s), green – baked or raw
- ½ cucumber(s)
- 3 beefsteak tomatoes, pitted
- 2 spring onions or shallots
- 100 g feta cheese, Greek
- 1 tbsp olive oil
- 2 tsp, heaped vinegar (white wine vinegar), or less
- Salt

Grate 100g of feta cheese into a fine powder. Baked bell peppers add a better flavor to the salad – but peel off the skin; it’s fine to grill them until slightly blackened. Cut the vegetables into small cubes, slice the spring onions or shallots into rings, and mix them lightly in a shallow bowl. Drizzle with white wine vinegar, olive oil, and salt. Place the mixture in 3-4 portions on small dessert plates (like a mound of rice) and sprinkle with the finely grated feta cheese. Garnish with parsley, if desired.
