Indian nectarine jam

Ingredients for 1 servings:

  • 1 kg nectarine(s)
  • 500 g gelling sugar (2:1)
  • ½ tsp cinnamon
  • 1 cardamom
  • 100 g brittle

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Wash and dry the nectarines. Then halve, pit, and finely chop. Mix with the gelling sugar and let it sit for about 1 hour. Add the cinnamon, cardamom, and brittle (broken into small pieces). Place everything in a saucepan and boil gently for 4 minutes, then remove the cardamom. Pour into prepared jars. Seal tightly and turn upside down. The original recipe calls for 50g brittle and 50g almonds (blanch the almonds in hot water, peel off the skin, slice them thinly, and add them to the jam). Personally, I prefer it with just the brittle.
