Indian pumpkin vegetables with coconut

Ingredients for 4 servings:

  • 2 kg pumpkin(s)
  • 2 onions
  • 400 g leek
  • 2 chili peppers
  • 3 tbsp oil
  • 500 ml vegetable stock
  • 800 ml coconut milk
  • 3 tsp vinegar essence
  • 2 tsp coriander, ground
  • 100 ml cream
  • 2 bunch coriander, fresh
  • Salt
  • pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Dice the pumpkin flesh and onions; finely chop the leek and chili. Combine the pumpkin, onions, and chili and sauté while stirring. Deglaze with vegetable stock and add the vinegar essence, ground coriander, salt, and pepper. Bring to a boil and simmer for about 10 minutes. Then add the leek and simmer for another 10 minutes. Then add the cream and coconut milk and bring to a boil with the lid uncovered. Sprinkle with salt, pepper, and fresh coriander. Serve with rice or potatoes.
