Ingredients for 8 servings:

  • 6 m.-sized onion(s)
  • 10 tbsp oil
  • 3 bay leaves
  • 1 ½ tbsp mustard seeds
  • 8 grains of allspice
  • 3 juniper berries
  • 600 ml vinegar (wine vinegar)
  • 600 ml chicken broth
  • salt and pepper
  • 2 tbsp sugar
  • 8 fish(s) (ready-to-cook green herring)
  • 4 tbsp lemon juice
  • 5 tbsp flour

Instructions

Working time approx. 1 hour; Rest period approx. 2 days; Total time approx. 2 days 1 hour

Marinated fried herring

Marinate the green herring in milk the night before frying. Slice the onions into thin rings using a cucumber slicer. Heat 2 tablespoons of oil, fry the bay leaves, mustard, allspice berries, and juniper berries in it. Add the onions, deglaze with vinegar and stock, and season with salt and sugar. Simmer gently for 10 minutes. Let cool. Remove the herring from the milk and pat dry. Season with lemon juice, salt, and pepper, then coat in flour. Heat 4 tablespoons of oil in a large non-stick frying pan. Fry the herring for 3-4 minutes on each side until golden brown. Drain on kitchen paper. Place the herring in a deep dish. Cover with the stock. Cover and let marinate for at least 2 days. You can also marinate trout instead of herring. Then add a few coriander seeds to the marinade.
