Ingredients for 4 servings:

  • 125 ml milk
  • 6 egg yolks
  • 200 g sugar
  • 250 g cream
  • 1 vanilla pod(s)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Split the vanilla pod lengthwise, scrape out the seeds, and slowly bring both to a boil with the milk. Whisk the egg yolks and half of the sugar in a bowl with a whisk or hand mixer until thickened. Whisk the hot vanilla milk (remove the vanilla pod) into the mixture, strain through a sieve, and let cool. Whip the cream until stiff peaks form, stirring in the remaining sugar. Loosely fold it into the vanilla cream, pour into a dish, and freeze for about 3 hours. Before serving, briefly dip the dish in hot water, turn the parfait out onto a plate, and slice it. Serve with: raspberry or chocolate sauce.
