Involtini – pork fillet rolls with Gorgonzola sauce

Ingredients for 4 servings:

  • 600 g pork fillet(s)
  • 300 g bacon or Parma ham
  • 150g Gorgonzola
  • 1 cup crème fraîche
  • 3 tbsp pine nuts
  • salt and pepper
  • Paprika powder
  • Butter for the mold

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the pork fillet into approximately 1 cm thick slices. Season with salt, pepper, and paprika, and wrap each one in a slice of ham. Place the rolls in a buttered dish and bake in an oven preheated to 200°C for 15-20 minutes. Mix the Gorgonzola with the crème fraîche and pine nuts. Pour the sauce over the rolls and bake for another 15-20 minutes. Serve with rice, a green salad, or baguette. The fillets are easy to prepare ahead of time. Cook the fillets for 15 minutes the day before, mix the sauce, and pour over the fillets. Then, cover and let them rest overnight. The next day, return them to the oven for another 15-20 minutes.
