Ingredients for 4 servings:

  • 4 steak(s), (veal saddle steaks)
  • 250 g spinach
  • 1 clove(s) garlic
  • 2 tbsp Parmesan
  • 2 tbsp ricotta
  • 1 tsp salt
  • 1 tsp pepper
  • ½ tsp nutmeg
  • 2 tbsp olive oil
  • 125 ml water
  • 1 tsp Fondor
  • 125 ml white wine

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Briefly sauté the garlic clove, then add the spinach and season with Fondor, salt, and pepper. Let the spinach cool, then mix with the Parmesan and ricotta. Then add the nutmeg, salt, and pepper. Stuff the steaks with the garlic and secure with a skewer. Heat the oil in a roasting pan, add the steaks, and sear them on all sides. Deglaze with the water and wine. Simmer on low heat for about 10 minutes. Serve with arugula and tomatoes with feta.
