Irish potato casserole

Ingredients for 3 servings:

  • 750 g floury potatoes
  • 1 medium-sized bell pepper(s), green, finely chopped
  • 1 medium-sized onion(s), finely chopped
  • 1 tbsp, leveled flour
  • 3 tbsp parsley, flat, finely chopped
  • 75 g cheese (Gruyère or Gruyère)
  • 1 pinch(s) of cayenne pepper
  • Salt and pepper, black
  • 25 g butter
  • 100 ml milk, hot
  • 100 ml cream, preferably reduced-fat

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Preheat oven to 180°C (fan). Peel potatoes, cut into 0.5 cm cubes, and place in a bowl. Add bell peppers and onions and mix lightly. Add flour, parsley, and cheese and mix well. Season with cayenne pepper, salt, and a little black pepper to taste. Grease a non-stick baking dish with a little butter. Spread the potato mixture evenly. Pour hot milk and cream over the potatoes and dot with the remaining butter in small pieces. Bake in the hot oven for about 1 hour, until the surface is crispy/golden brown and the potatoes are tender. Serve immediately. Serve with a green or mixed salad.
