No beer is used in the production of Bierschinken. But since it is traditionally eaten with beer, it was called that. Similar to the bockwurst that is served with the bock beer.
Beer ham consists mainly of finely chopped pork, bacon, and spices. Salted pieces of pork are added to this meatloaf. The pieces are about the size of a walnut and are clearly recognizable in the sausage after they have been cut open, giving the sausage slices a pattern. Beer ham is eaten cold in thin slices on bread.
If other cuts of meat are used, the packaging must indicate the animal species from which the meat comes. The mass is filled into artificial intestines and scalded, sometimes the beer ham is smoked before scalding. A variation is the poultry beer ham, which can also contain pork. It is not prescribed how high the proportion of poultry must be in the production of poultry beer ham.
