The zucchini peel contains the most vitamins. It is enough to wash the zucchini with water, the skin can be eaten.

Zucchini from your own garden can contain the bitter substances cucurbitacins through backcrossing. If the courgettes taste bitter, they should never be eaten, either raw or cooked, as higher concentrations of cucurbitacins can lead to diarrhea and vomiting.

Store-bought zucchinis can also taste bitter from time to time and should then be better disposed of.
