Ingredients for 4 servings:

  • 2 large tomatoes, ripe, cut into small cubes
  • 1 cucumber(s), peeled and diced
  • 1 bell pepper(s), green, pitted and diced
  • 1 onion(s), chopped
  • 4 tbsp fresh parsley, chopped
  • 3 tbsp olive oil
  • 1 lemon(s), the juice
  • Salt and pepper, black, from the mill
  • Mint, a few leaves, fresh, for garnishing

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Place the diced tomatoes, cucumber, bell pepper, and chopped onion in a bowl with the parsley and mix. Drizzle with olive oil and lemon juice, season with salt and pepper to taste, and mix again. Serve garnished with fresh mint.
