Ingredients for 4 servings:
- 2 large tomatoes, ripe, cut into small cubes
- 1 cucumber(s), peeled and diced
- 1 bell pepper(s), green, pitted and diced
- 1 onion(s), chopped
- 4 tbsp fresh parsley, chopped
- 3 tbsp olive oil
- 1 lemon(s), the juice
- Salt and pepper, black, from the mill
- Mint, a few leaves, fresh, for garnishing
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Place the diced tomatoes, cucumber, bell pepper, and chopped onion in a bowl with the parsley and mix. Drizzle with olive oil and lemon juice, season with salt and pepper to taste, and mix again. Serve garnished with fresh mint.
