Soul warmer – vegetable stew

Ingredients for 4 servings:

  • 2 onions, red
  • 600 g potatoes
  • 500 g carrot(s)
  • 2 kohlrabi
  • 2 tbsp butter or margarine
  • 1 liter meat broth, instant or home-cooked, strong
  • Salt (celery salt)
  • Pepper, white
  • 300 ml cream
  • 4 sausages (Vienna sausages)
  • 125 g smoked bacon
  • Parsley, plenty, chopped

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the onions and slice into thin rings. Peel and wash the potatoes. Wash the carrots, peel the kohlrabi, and dice everything. Melt the butter or margarine in a large pot and sauté the onion rings until translucent. Add the remaining vegetables and sauté lightly. Then pour in the hot stock. Season the stew with salt (celery salt is also a good option) and pepper and simmer for about 30 minutes. Finally, stir in the cream; do not let it boil. Add the sausages to the stew and heat through. Cut the bacon into strips and fry in a pan. Finally, sprinkle the vegetable pot with the bacon strips and plenty of chopped parsley. Season again with salt and pepper if desired. I confess I add a few drops of seasoning liquid (Maggi soup seasoning).
