Ingredients for 4 servings:
- 500 g penne or other short pasta
- salt water
- 1 onion(s)
- 1 clove(s) garlic
- 12 apricot(s), dried
- 100 g lentils, red
- 1 can/n tomatoes
- 200 ml vegetable stock
- cumin
- Cinnamon
- Harissa
- some oil

oriental tomato sauce with red lentils
Cook the pasta in salted water according to the package instructions. Meanwhile, finely dice the onions, garlic, and apricots. Heat a little oil in a pan. Sauté the onions and garlic until translucent. Add the apricots and lentils. Continue frying until the apricots are no longer sticking together. Add the cumin and a little cinnamon to the pan and toast. Deglaze with the tomatoes. Add the vegetable stock. Cook until the lentils are tender. Season with harissa.
