Orange – Carrot – Salad

Ingredients for 4 servings:

  • 500 g carrot(s)
  • 250 g apples, sour, firm
  • 1 lemon(s)
  • 20 g sugar
  • 50 g raisins
  • 4 oranges
  • 100 g celeriac
  • 20 g chopped pistachios
  • 1 tbsp cream, per serving

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Finely grate the peeled carrots. Thinly slice the peeled apples, drizzle with lemon juice, and mix in the sugar. Mix the raisins, which have been blanched in boiling water and drained, with the filleted orange pulp (approx. 250g orange pulp in total). Finely grate the celery. Mix with all the other ingredients and let stand for 20 minutes. Pile into decorative bowls and sprinkle with the pistachios. Drizzle 1 tablespoon of fresh cream over each bowl and serve with crackers or crispbread – a wonderfully fresh appetizer!
