Ingredients for 1 servings:

  • 300 g durum wheat semolina
  • 300 g wheat flour type 00
  • 360 ml water
  • 10 g dry yeast
  • 1 pinch(s) of sugar
  • ½ tsp salt
  • 3 tbsp olive oil

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours 10 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 3 hours 15 minutes

In a bowl, mix the water and dry yeast with a pinch of sugar and let it rest for 10 minutes. In a large bowl, mix the flour and semolina with the salt, then slowly add the yeast and water and mix. Knead the dough for at least 10 minutes until it is nice and smooth. Then let it rest for 1 hour. Knead the dough again, adding the olive oil, and let it rest for another 30 minutes. Then shape the dough into a loaf or rolls and let them rest on a baking tray for another 30 minutes. Place a bowl of cold water in the oven. Bake the bread in a preheated oven at 200°C (top/bottom heat) for about 45 minutes, or in a bread maker for 55 minutes for a dark crust.
