Italian bread salad

Ingredients for 4 servings:

  • 4 slices of white bread
  • 1 cucumber(s)
  • 4 tomatoes
  • 1 bag of mozzarella (minis)
  • 3 tbsp olive oil
  • salt and pepper
  • herbs, Italian
  • 5 tbsp water
  • 6 tbsp Crema di Balsamic vinegar
  • some sugar
  • some lettuce (a few leaves)

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Roughly dice the white bread and place it on a baking sheet lined with parchment paper. Drizzle with olive oil and season with plenty of salt, pepper, and Italian herbs. Mix briefly, then roast in a preheated oven at 200°C for about 10 minutes until golden brown. Remove and let cool. Halve the tomatoes, remove the stems, and slice. Trim the ends of the cucumber. Halve the cucumber and cut into bite-sized pieces. Arrange the ingredients on salad plates. Mix together the olive oil, balsamic vinegar, and water. Season to taste with salt, pepper, sugar, and Italian herbs. Drizzle over the salad.
