Ingredients for 1 servings:

  • 250 g flour
  • 3 tbsp mixed herbs, chopped
  • 100 g margarine, cold
  • 1 tsp salt
  • 1 tsp vinegar
  • 125 ml water
  • Flour , for the work surface
  • 200 g cream cheese
  • 200 g Cabanossi, finely diced
  • 1 bunch basil, finely chopped
  • 1 egg white
  • 1 egg yolk, whisked

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Knead the dough ingredients into a smooth shortcrust pastry and chill for about 30 minutes. Meanwhile, mix the filling ingredients. Preheat oven to 200 degrees Celsius. Roll out the dough on a floured surface to a thickness of 2 mm and cut out squares (9×9 cm). Place 1 heaped teaspoon of filling into the center of each square. Brush the edges of the dough with egg white, fold the squares into triangles, and press the edges together. Brush with egg yolk and sprinkle with Parmesan cheese. Bake the herb wedges in the preheated oven on the middle rack for about 20 minutes until golden brown.
