Italian mushroom salad

Ingredients for 4 servings:

  • 600 g mushrooms, white, small
  • 6 tbsp olive oil
  • 1 cup parsley, flat
  • 1 sprig(s) of oregano
  • 1 garlic clove(s)
  • 1 tbsp balsamic vinegar
  • 3 tbsp lemon juice
  • Salt
  • pepper
  • ½ chili pepper(s)

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Clean the mushrooms and slice them thinly. Heat 3 tablespoons of olive oil and fry the mushrooms for 8 minutes. Meanwhile, chop the herbs. Place the mushrooms in a bowl with the herbs and crushed garlic and mix. For the marinade, whisk together the remaining olive oil and lemon juice. Season with salt and pepper. Pour the marinade over the mushrooms, mix, and let stand for 1 hour. Deseed the chili pepper and slice it thinly. Finally, add it to the salad and serve.
