Ingredients for 6 servings:

  • 400 g penne or spaghetti
  • 2 tbsp olive oil
  • 2 bell peppers, red
  • 2 Pepper
  • 4 tomatoes
  • 4 tbsp parsley
  • 2 onions
  • 15 olives, black
  • 15 green olives (possibly with pepper filling)
  • 4 tbsp balsamic vinegar
  • 4 tbsp basil
  • 1 tbsp oregano
  • 2 tbsp salt and pepper
  • 1 tbsp garlic, chopped

Instructions

Working time approx. 30 minutes; Rest time approx. 1 day 6 hours; Total time approx. 1 day 6 hours 30 minutes

Pasta salad with a twist

Cook the penne according to the package instructions until al dente. Drain well and let cool. Peel and deseed the bell peppers, and slice into thin strips. Cut the chili peppers into very small pieces. Wash the tomatoes and dice or thinly slice them. Pit the olives. Peel and finely chop the onions. Mix everything with the pasta. Mix together olive oil, balsamic vinegar, crushed garlic, pepper, and salt to make a spicy salad dressing. Roughly chop the basil and stir it into the salad dressing with the oregano. Pour the dressing into the pasta salad and mix well. Let it sit in the refrigerator for about 30 minutes before serving.
