Italian pork fillet à la Nonna

Ingredients for 3 servings:

  • 500 g pork fillet(s)
  • 150 g Parma ham, thinly sliced
  • 1 onion(s)
  • 3 cloves garlic
  • 50 g olives, black
  • 1 can tomatoes, chopped
  • 250 ml cream
  • Rosemary, dried
  • Thyme, dried
  • Paprika powder
  • Allspice d’Espelette or cayenne pepper
  • Wild garlic, dried
  • salt and pepper
  • olive oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 55 minutes; Total time approx. 1 hour 5 minutes

Cut the pork fillet into medallions, wrap them in Parma ham, and place them in a baking dish. Dice the onion and garlic and sauté in olive oil, but do not allow them to brown. Add the canned tomatoes and olives and heat gently, seasoning with herbs and spices to taste. Add the cream and bring to a boil. Adjust the seasoning to taste. It can be spicy, if desired. Spoon the sauce onto the pork fillet slices and place the dish in the oven at 180°C for about 45 minutes. Serve with rice or ciabatta.
