Italian pork roulades

Ingredients for 4 servings:

  • 1 onion(s)
  • 8 tbsp oil
  • 1 can of tomatoes, 425 ml
  • 30 g pine nuts
  • 12 steak(s) , (minute steaks from pork)
  • 100 g cream cheese
  • 2 tbsp pesto, green
  • 100 g tomatoes, dried, preserved in oil
  • 2 tsp honey
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Chop the onion and sauté in 1 tablespoon of oil. Add the canned tomatoes and chop. Bring to a boil and season with salt, pepper, and honey. Heat 1 tablespoon of oil and toast the pine nuts for 4 minutes. Flatten the minute steaks slightly. Season with salt and pepper. Mix the cream cheese and pesto. Spread the mixture over the steaks. Top with sun-dried tomatoes and pine nuts, roll up, and secure with wooden skewers. Brown the roulades in the remaining oil, add the tomato sauce, and braise for about 10 minutes. Pasta goes best with this.
