A homage to the film “Rocky” in burger format

Cut the mozzarella into slices and drain on kitchen paper. Slice the tomatoes. Clean and wash the spring onions, then halve them crosswise, then lengthwise. Heat 2 tablespoons of oil in a pan and fry the salami slices until crispy. Drain on kitchen paper. Meanwhile, cut the salsiccia lengthwise, remove the sausage meat from the casing, and place it in a bowl. Mix with the minced pork and, using moistened hands, form 2 patties. Heat 2 tablespoons of oil in a pan and sauté the spring onions for 2 minutes. Add the honey, deglaze with balsamic vinegar, and reduce until almost completely reduced. Season with salt and pepper and set aside. Heat the remaining oil in a pan and fry the patties for 4-5 minutes on each side. Just before the end of the cooking time, add the mozzarella slices to the patties. Meanwhile, cut the buns in half horizontally and bake in the preheated oven. Spread the cut surfaces with mustard and mayonnaise. Top the bottom halves of the buns with tomato, spring onions, basil, patties, and salami, and top with the bun lids.
