Ingredients for 6 servings:
- 1 pack of puff pastry, frozen
- 750 g leaf spinach, frozen
- 30 g butter
- 400g mozzarella
- 1 roll
- 4 tbsp milk
- 2 egg yolks
- salt and pepper
- nutmeg
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Thaw the spinach. Crumble the bread roll and soak it in lukewarm milk. Cut the mozzarella into small cubes. Preheat the oven to 180°C. Grease a springform pan with butter, thaw the puff pastry, and line the bottom and sides of the pan with it, reserving some of the pastry for the lid. For the filling, warm the spinach in a pan, squeeze out the excess moisture from the soaked bread roll and add it, then add the two egg yolks and mix well. Season with salt, pepper, and nutmeg, fold in the cheese cubes, and spread the filling on the puff pastry. Cut the remaining pastry into strips and arrange them in a lattice pattern over the filling. You can also brush the lattice with milk, water, or egg yolk. Bake for 30 minutes.
