Ingredients for 4 servings:
- 4 zucchini
- 5 eggs
- 150 g Parmesan, grated
- a few stalks of basil
- Flour for turning
- Olive oil for frying

Cut the zucchini into thick slices, boil in salted water for about 8 minutes, and drain well. In the meantime, whisk together the eggs, Parmesan cheese, and fresh basil. Season with pepper, if desired. Cut the drained zucchini into 1 cm wide slices. Coat in flour and then dip in the egg mixture. Fry in hot oil for about 2-3 minutes on each side until golden brown. Cool on kitchen paper and sprinkle with salt. Serve with a mixed salad or Caprese salad.
