Ingredients for 6 servings:
- 250g mozzarella
- 2 bunches of arugula
- 100 g Parma ham
- 2 tbsp olive oil
- 2 tsp balsamic vinegar
- 2 tbsp lemon juice
- a little salt and pepper
- 1 pinch(s) of sugar
- 4 tomatoes, firm
- e.g. parsley and basil, fresh
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Drain and dice the mozzarella. Deseed the 4 tomatoes, dice the flesh, and toss with 1 tablespoon of lemon juice. Wash and drain the arugula. Place on a wide platter and arrange the other ingredients on top. Mix the oil with the vinegar, the remaining lemon juice, salt, pepper, and a pinch of sugar. Pour over the salad. Garnish with fresh parsley and fresh basil.
