Italian tomato bread salad with mozzarella

Ingredients for 2 servings:

  • 5 large tomatoes
  • 1 large cucumber(s)
  • 125g mozzarella
  • 2 cloves garlic
  • 4 spring onions
  • 2 slices of toast
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • basil leaves
  • e.g. salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Finely dice the tomatoes, cucumber, and mozzarella. Finely slice the spring onion. Toast the bread and let it cool, then dice it as well. Finely chop the basil. Now, in a bowl, combine the olive oil and balsamic vinegar. Add the chopped vegetables and the crushed garlic. Mix everything together and season with salt and pepper. Finally, add the bread, but only shortly before serving, otherwise it will get too soggy.
