Italian tomato bread salad

Ingredients for 4 servings:

  • 1 ciabatta
  • 100 ml olive oil
  • 2 garlic cloves
  • 1 bunch of spring onions
  • 75 ml vinegar (white wine vinegar)
  • 600 g cherry tomatoes
  • 1 pot basil, fresh
  • Salt and pepper, freshly ground
  • 50 g Parmesan, sliced

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the bread into bite-sized pieces and spread them on a baking sheet. Drizzle with olive oil and peeled and diced garlic. Brown everything in the oven at 200°C, using the broiler if desired. Then transfer the bread cubes to a bowl. Trim the spring onions and slice them into thin rings. Sauté them in a little oil until translucent, pour in the vinegar, and spread everything over the bread. Wash and quarter the tomatoes, then add them to the bread along with the torn basil and Parmesan cheese. Mix everything well and season with salt and pepper.
