Ingredients for 2 servings:
- 1 can jackfruit, young, in brine
- 1 small potato(s)
- 2 tbsp flour for binding (e.g. corn flour)
- ½ onion(s)
- 4 tbsp breadcrumbs
- 1 tsp mustard
- Oil for frying
- salt and pepper

Remove the jackfruit from the can and chop it with a blender or mash it with a fork in a bowl. Then fry it with a little oil and flour over low heat until the organic jackfruit is lightly browned. Meanwhile, cook the potatoes and then mash them with a potato masher or again with a fork. Finely chop the onions and add them to the mashed potatoes. Add the fried jackfruit pieces, the flour to thicken them, half of the breadcrumbs, and the mustard. Mix well and season with salt and pepper. If desired, add additional spices or smoke flavoring. The mixture should now be firm enough to easily form patties. Coat the jackfruit patties on both sides in the breadcrumbs and fry in the pan for about 5 minutes on each side. Once the jackfruit patties are ready, get creative and top the burgers however you like! Tip: If you have some lead time before your burger dinner, prepare the jackfruit patties a day or a few hours in advance. Simply let the finished mixture sit in the refrigerator and fry later. This will give the patties a firmer texture.
