Ingredients for 1 servings:

  • 125 g butter or margarine
  • 125 g sugar
  • 1 egg(s)
  • 250 g flour
  • ½ pack of baking powder
  • e.g. jam (strawberry or raspberry jam)

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

according to my host mother’s original English recipe

Cream the softened butter with the sugar until very creamy. Beat in the egg. Mix the baking powder with the flour and fold into the egg-butter mixture. Form the dough into ping-pong ball-sized balls and flatten them on a baking sheet lined with baking paper. Use your thumb to make a hollow in the center of the cookies. Add about a teaspoon of jam. Bake in an oven preheated to 160°C (fan-assisted) for about 15 minutes.
