Jane's chicken strips with zucchini

Ingredients for 4 servings:

  • 2 chicken schnitzels (approx. 300 g)
  • 1 large onion(s), diced
  • 1 garlic clove(s), diced
  • 1 large zucchini, cut into coarse strips
  • 1 large bell pepper(s), cut into strips
  • 300 g rice (parboiled rice)
  • 625 ml water
  • Salt
  • Pepper, coarsely ground
  • curry powder
  • Paprika powder, sweet
  • ½ tsp cayenne pepper
  • 2 tbsp sour cream

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Cut the chicken cutlets into strips and fry them with the onion. Add the garlic clove, zucchini, and bell pepper to the meat and fry briefly. Add the rice and fill with water until the rice is covered. Season with the spices indicated. Once the water has been absorbed and the rice is cooked, stir in the sour cream and season again to taste. Serve hot.
