Jansson's Temptation

Ingredients for 4 servings:

  • 6 large potatoes, peeled, mostly waxy
  • 2 m.-sized onion(s)
  • 3 tbsp butter
  • 60 g anchovies, or anchovy fillets or anchovy paste
  • 2 dl cream, or cream-milk mixture
  • salt and pepper
  • Fat, for the shape

Janssonin Kiusaus – a Finnish (Swedish) potato casserole

Dice the onions and sauté in half of the butter. Slice the raw, peeled potatoes into thin sticks, or slice them if that’s not possible. Mix with the onions and the drained and finely chopped anchovies (Caution: Very salty!) and place in a greased baking dish. Season and pour the cream (if using anchovy paste, add it to the cream and mix well) over the potato and onion mixture. Place knobs of butter on top and bake in a preheated oven at 180°C for about 45 minutes, until the casserole is golden brown and the liquid from the potatoes has absorbed. You can also sprinkle breadcrumbs on top before baking; it tastes very good. Serve with salad or as a side dish. Janssonin Kiusaus is often eaten at Juhannus, the Midsummer Festival.
