Ingredients for 4 servings:

  • ½ kg flour
  • ½ liter of water
  • 1 tsp salt
  • 400 g minced pork
  • 2 spring onions
  • 1 piece(s) ginger, about hazelnut-sized
  • 1 garlic clove(s)
  • 200 g vegetables (leafy greens), e.g. spinach, Chinese cabbage, chard
  • 1 dash of soy sauce
  • Salt
  • ¼ liter vinegar, Chinese
  • 1 dash of soy sauce
  • 1 garlic clove(s)
  • lots of water (salt water)

also called Chinese Maultaschen, Chinese Ravioli or Chinese dumplings

Knead the water, flour, and salt into a firm dough that’s easy to roll out. Let the dough rest for 30 minutes. For the filling, finely chop the spring onions, ginger, garlic, and vegetables and mix them with the minced meat. Add the soy sauce and salt. For the sauce, finely chop the garlic. Mix the soy sauce and vinegar and add the garlic. Knead the dough into a roll about 4 cm thick. Cut pieces of about 1 cm from this roll. Roll out the pieces with a rolling pin or glass into round flatbreads (about 10 cm in diameter). Place 1-2 teaspoons of filling on each flatbread, press the edges together, and cook in plenty of salted water until tender.
